Salmon in the oven

Ingredients

  • Fresh salmon in slices or salmon fillet without the skin
  • Olive oil
  • Vegetables of your choice (broccoli, zucchini, onion rings, etc.)
  • Lemon juice

Method

Take the salmon and put it in a roasting pan with a little bit of oil (salmon releases its own oils when cooked) and add the well-washed and chopped vegetables of your choice. Cook in preheated oven for about 30 minutes at 180⁰C. 5 minutes before you switch off the oven, add some lemon juice.

Salmon with pasta

Ingredients

  • Fresh salmon in slices or salmon fillet without the skin
  • Chopped onions
  • Chopped tomatoes
  • Chopped dill
  • Chopped parsley
  • Pasta of your own choice
  • Water
  • Olive oil

Method

Take the salmon without the skin, chop it, wash it well and let it drain. Add the chopped vegetables into a saucepan and saute them in olive oil. Then add the chopped salmon and once it gains a light brown color, remove the saucepan from the heat. Boil the pasta of your selection for 10 minutes, drain it and place it in a saucepan with a little bit of olive oil. Pour inside the already cooked salmon and start mixing it with the pasta for about 3′.

Sardines in the oven

Ingredients

  • Fresh sardines (cleaned)
  • Water
  • Olive oil
  • Salt and pepper
  • Cinnamon (optional)

Method

Rinse the sardines very well and place them in a roasting pan. Add olive oil, a little water, salt, pepper and cinnamon preferably (cinammon absorbs the strong smell of the fish without strongly affecting the flavor). Place the pan in preheated oven and roast for 20 minutes at 180⁰C.

Roasted cod in the oven with vegetables

Ingredients

  • Medium size fresh cod or large in slices or cod fillet
  • Chopped tomatoes
  • Chopped onions
  • Chopped parsley
  • Chopped garlic (optional)
  • Olive oil
  • Salt and pepper

Method

Rinse well the cod and chop the vegetables. Leave the tomatoes in a strainer to drain from all the juices. Spread the fish in a roasting pan (the whole fishes are placed alternately head up, tail up, and so on / the slices should cover the surface of the pan without the one slice being over the other / the fillet should be spread on the pan with the skin side touching the pan). Then spread all the vegetables over the fish to cover it and season. Add only a generous amount of olive oil and no water since the vegetables will release their own liquids during cooking. The additional amount of water will result in the boiling process rather than the roasting process, something which is not desirable. Place the roasting pan in preheated oven and cook for about 40 minutes at 180⁰C. Check the tomato, if it is cooked, then the fish is ready.

Roasted Cod

Ingredients

  • Medium size fresh cod or large in slices or cod fillet
  • Olive oil
  • Little water
  • Salt, pepper, oregano
  • Chopped potatoes (optional)

Method

Rinse well the gutted cod and place it in a roasting pan (the whole fishes are placed alternately head up, tail up, and so on / the slices should cover the surface of the pan without the one slice being over the other / the fillet should be spread on the pan with the skin side touching the pan). Add salt and pepper and oregano everywhere. Brush the fish with excessive olive oil and add some water to dilute it. If you prefer you may also add chopped potatoes so that they will be cooked at the same time with the fish. Place the roasting pan in preheated oven and cook it for about 35′ at 180⁰C.
