- Medium size fresh cod or large in slices or cod fillet
- Olive oil
- Little water
- Salt, pepper, oregano
- Chopped potatoes (optional)
Rinse well the gutted cod and place it in a roasting pan (the whole fishes are placed alternately head up, tail up, and so on / the slices should cover the surface of the pan without the one slice being over the other / the fillet should be spread on the pan with the skin side touching the pan). Add salt and pepper and oregano everywhere. Brush the fish with excessive olive oil and add some water to dilute it. If you prefer you may also add chopped potatoes so that they will be cooked at the same time with the fish. Place the roasting pan in preheated oven and cook it for about 35′ at 180⁰C.
